As a follow-up... I also ended up purchasing Thyme, for dynamic lunch menus, but also for some other benefits. Honestly, I'd say...use Moodle! It can do everything you mentioned!

Steve, Interesting info. Thanks for that. I do run a few Moodle sites, and considered using Moodle as our main CMS, but feel that Joomla has a more polished look and feel.
