Hi, I'm just hoping someone can help us find a server/host for Joomla, I'd like ot get somehting running in the next week or so. 

We are a collective group of non-profits involving homeless healthcare around the world.  I am helping to get a community web site up and running. 

We have no problem paying $5-$15 a month for a server, but there are so many that pop up on searches I was hoping someone could help narrow it down, especially if there is a good host to help serve volunteer organizations?  I would also be looking for "standard" features such as server uptime, backups and customer support.

If you haven't checked out lunarpages.com - you should. $7.95 / month for their basic plan - includes access to joomla and others through the cpanel interface.

We've been very happy with them.

We have some leftover unused space. Full control panel, help desk, etc. Must be registered charity or non profit. Need help with tos agreement. Limited space. Let me know. Should have experience running Plesk.
