I have two non-profit sites that are Joomla:

The Salvation Army's Southern California Camp Mt Crags at http://www.campmtcrags.org Uses Community Builder and Gallery2

and a Thai Foundation which is a home for homeless kids at http://www.baannokkamin.org/english (the Thai portion isn't fully upgraded to Joomla yet).

Both are using my modifications of existing templates.
